Great Granola



Here's the beginning of the makings of a great granola. Around our place lately, Kevin has been making oatmeal with apple chunks and Mongolian milk (different than skim milk picked up from Kwik Trip). I just needed a break from the "same-o, same-o", so went online to search for a granola recipe. I had dried blueberries, dried apricots, and some sunflower meats which made a nice addition to this granola.

Here's the recipe. What I like most about this, is that it's done on the stovetop in less than 20 minutes, so you don't have to bake it and stir it over a long period of time like some granola recipes I've used. Enjoy!


(All ingredients combined, toasting on the stove top!)

Stovetop Granola

1 T. olive oil
3 cups quick cooking oats or old fashioned oats
1/3 cup butter (I used a scant 1/3 cup)
1 T. honey
1/3 cup brown sugar (I used a scant 1/3 cup)
1 tsp. vanilla
dash of cinnamon
1/2 cup any chopped nuts or sunflower meats
1/3 cup any dried fruit--I used dried apricots and dried blueberries

Heat the oil in a skillet over med. high heat. Add oats; cook and stir until the oats start to toast (light brown in color). Watch this...you don't want it to burn! Spread on cookie sheet to cool. Turn the heat down to med. In the same pan, melt the butter; add honey and brown sugar. Cook & stir 5 minutes. Add oats and other ingredients. Stir well then pour out onto the cookie sheet or a 9 X 13 pan to cool. Break apart and store in an air tight container after it has totally cooled.

I have enjoyed 3-5 spoonfuls of this in my yogurt. Oh, yum!
