Hammocks and Eating

Another favorite "activity" (if you can call it that!) is reading in a hammock…I think this is the first time I’ve ever used a hammock, and I love it. The tropical birds chirp away, and the breeze is wonderful. A few days ago, I was finishing a book I started last week called, “Peace Like a River.” I was reading a section where the author was describing heaven and I thought, perhaps the hammock and birds were part of the description! Since then, I've started reading another book, a novel by Elisabeth Elliot. So far, I've really enjoyed it. It's named, "No Graven Image," and it's about a young girl who goes to Ecuador to live/do relationships with the Quichua Indians. I'm sure Elisabeth draws from her own experience in Ecuador. If you want an interesting book, I'd recommend it (I'm only on chapter 6, but so far, I have enjoyed it).





For food today: something new we’ve never had---a Thai pancake for breakfast. We had it at a roadside stand from a friendly Thai woman in her 20’s or 30’s. She spoke English pretty well and made some conversation with us as she patted a wad of dough in her palm and then pressed it with oil on a board. This was the beginning of the pancake. She had a huge round griddle where the thin, flattened dough piece eventually landed. As it began to sizzle, she sliced a banana lengthwise into thirds and lay those pieces on the circle of dough. The dough edges were pulled to the center, sort of like diapering a banana. Then, she snuck a spoon full of butter under the dough to fry that baby crisp. The dough/banana clump was flipped over on the griddle and then, after getting crispy, laid onto a plate and drizzled with chocolate and cut into about 12 little squares. The only thing healthy about this is the banana!

And here's the final product, cut up into bite sizes and eaten with a long "toothpick" type tool.

oh man this looks DELICIOUS! and im reading this right before breakfast! (which will probably consist of cereal) bummer! :)

After you told me about your Thai pancake the other day, I improvised and made "American Thai Pancakes" on Tuesday, our below-zero day that closed public schools and allowed our home school indulge in a late start and pancakes at 9 a.m.

I made regular pancakes, ensuring that my batter was just a little on the thin side. As one side was cooking, I placed a long slice of banana on top, "diapered" it, and turned it over. Like your little Thai lady who told you, "Come back. I make you good food," I added some butter to ensure a nice crisp finished product. oh, yum!

Mine was low cal, though, without the chocolate. ;) Love your photo!
